Zabonzuke, a traditional specialty of Nagasaki, are made by soaking the peel of zabon (a type of pomelo) in Shimabara spring water and slowly simmering it with sugar, syrup, and honey.
The unique subtle bitterness of Zabon and its gentle sweetness are perfectly balanced.
